Potassium cinnamate is widely used in food due to its good solubility, and its preservative mechanism is that potassium Cassia bark acid is converted into Cassia bark acid under acidic conditions. Cassia bark Acid is a weak acid with PH at 4.37-4.44, and its antimicrobial effect depends on most of it being in the form of unionized acid molecules. When dissolved in water, weak acids incompletely ionize into ions, but form an equilibrium between charged, ionic forms, and uncharged, unionized forms. Both forms of ratio-dependent solution PH, the more acidic the solution, the more unionized forms.

Potassium cinnamate is new plant source flavor type food preservative modification, widely used in all kinds of food anticorrosion, such as pickled meat, pickles, sour beans, seafood, baking, pasta, noodles, spicy dry tofu, etc. It can match or replace some traditional preservatives (potassium sorbate, dehydrobitate, dehydrogenation, sodium diacetate, sodium benzoate, etc.). It can also be used as a compound preservative raw materials.In addition,strong antibacterial ability, especially on the mold, bacteria and yeast that cause food corruption.
